Zucchini
with Onion and Tomato

This dish serves 4-6 people. The preparation time is about 15
minutes.
- 3 Medium Zucchini -- diced
- 1 medium onion -- diced fine
- 1 medium tomato -- peeled and chopped
- 1 teaspoon Garlic Paste
- 1 teaspoon Ginger Paste
- 1/2 teaspoon salt
- 1/4 teaspoon turmeric
- 1/2 teaspoon chili powder
- 2 tablespoons olive oil
Put the oil in a medium sized pan and set over medium heat.
When hot, add the onions and fry until they are golden brown.
Add the garlic paste and ginger paste.
Stir and fry for a minute.
Now put in the salt, turmeric, and chili powder.
Stir it for a few seconds and add the tomatoes to the pan.
Stir it for about a minute.
Add the zucchini to the pan and stir to mix it nicely with the tomato
and spice mixture.
Cover and cook on medium-low heat, stirring occasionally, for about
five to ten minutes or until the zucchini is done.
Serve with pita or a crusty French bread.
