Black Beans
and Yellow Rice

Serving Size : 4
- 1 5 oz pkg saffron rice mix
- 1 15 oz can black beans
- 5 tablespoons lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 2 tablespoons chopped fresh cilantro
- garnishes: sliced green onions, etc.
Cook rice per package directions and keep warm.
Meanwhile, drain beans, reserving 2 tablespoons of liquid.
Combine beans, reserved liquid, lime juice, chili powder, and cumin
in saucepan. Cook over medium heat until thoroughly heated.
Stir in 1 tablespoon of cilantro.
Serve beans over rice; sprinkle with remaining cilantro.
Garnish if desired and serve.
Serving Ideas : Serve w/tortilla chips & pineapple chunks tossed
w/cilantro
