Tamales

Tamale dough:
- 4 cups masa harina
- 1.5t salt
- 2.5 cups water
- 1-1.5 cups corn oil
Combine masa harina, salt, water and 1 cup oil and knead.
Add remaining oil as necessary, to form a smooth dough.
My favourite veggie filling is probably mixed veges (carrots,
peas, tomatoes, green beans, cauliflower, all chopped and cooked).
Saute onion and garlic in a little oil, add jalapeno or serrano
chillies, then add the veges and mix till well blended.
I also like to add olives and black beans, or garbanzo beans on
occasion.
