I've never actually followed the recipe so I don't know how close
the measurements are... I just add until it tastes good.
These are soo good, my meat loving husband likes them too.
Saute onions until soft.
- 1pkg tortillas ( I use fajita size, I have also used wheat)
- enchilada sauce
- 4c black beans -- cooked
- 2c corn
- 2c brown rice -- cooked
- 1/4c onion -- chopped fine
- 2tsp chili powder
- 3tbsp tomato paste
- garlic powder
- black pepper
Mix beans, corn, rice, tomato paste and chili powder.
Spoon into tortillas.
Roll them up and put into a casserole pan.
Pour enchilada sauce over the top.
Bake for 15 - 20 minutes at 350.
