Pico de
Gallo 2

Here is a simple basic salsa called" Pico de Gallo."
It can be improved or improvised by adding different types of chiles
or by changing the consistency (i.e. blending, mashing,chopping)
- 4 or 5 medium sized tomatoes (if you can't find ripe tomatoes
use Roma type)
- one small onion
- 2 Jalapeno chiles (or whatever you can handle!)
- 2 cloves of garlic
- one bunch of cilantro
- juice of two small limes (mexican or key lime is best, lemon
also okay)
- 2 tbs. of olive oil
- 1 tsp. salt or to taste
Chop all ingredients very fine and mix them thoroughly. Add oil, salt
and a little water.
You can use canned tomatoes if fresh tomatoes are too green.
Yellow chiles are also a nice addition because they are very flavorful.
Try Serrano chiles if you want a hotter salsa.
