Internet Enchilada Sauce

This creation was made because we were out of our usual brand name
enchilada sauce. However, I dare say it is actually more tasty and
healthier than the regular store-bought canned product. Especially
with the vegies being Farmers market ones.
- 2xLarge Tomatoes(diced)
- 1xMedium Onion(diced)
- 2xMedium Carrots(diced)
- 1-2 cloves Garlic
- 1/4 cup Salsa
- 1 tsp. Cayenne Pepper
- 1/2 tsp. Thyme
- 1-2 dashes Habanero Sauce
- 2 Bay Leaves
- 1 tsp. Cumin
- 2 tbsp. Olive Oil
- 1/2 tsp. Dried Oregano
- 2-1/2 tsp. Chili Powder
- 1/2 tsp. Dried Basil
- 1/8 tsp. Ground Black Pepper
- 1/8 tsp. Salt
- 1/4 cup Secret Ingredient (beer)
Heat oil in a large saucepan over medium heat. Add garlic and
saute for 1-2 mins. Add onion, oregano, chili powder, basil, ground
black pepper, salt, cumin, parsley, salsa, and tomatoes.
Mix together and stir in the water. Bring to boil, reduce heat to
low and simmer for 15-20 mins. Remove bay leaves, and the sauce
is ready for making enchiladas or what have you.
Depending on the tomatoes, you may need to add a little water.
