Basic Pancakes

I just made pancakes this morning on my cast iron griddle.
If yours are burning, then you have the heat turned too high.
Also, I do not "fry" them in oil, I keep all of my cast iron well-
seasoned by rubbing with oil after cleaning.
Here is the recipe I use for pancakes:
Sift Together:
- 2 1/2 cups whole wheat flour
- 4 tsp baking powder
- 1 tsp salt
- 1/4 tsp pumpkin pie spice
Blend together with dry ingredients:
- 1 1/2 cups Oat "milk" ( soy can be used but I prefer the oat)
- 1 cup water
- 1/2 cup vegetable oil
- 1 tsp Vanilla
Mix with a fork until all ingredients are moistened, allow batter
to be lumpy..this makes lighter fluffier pancakes. |
