Corn and
Zucchini Tamali Pie

- 6 oz. extra firm tofu, frozen, then thawed and drained
- 4 cloves garlic
- 1/2 of a medium onion
- 3-4 ears fresh corn
- 1 tsp. salt
- 2 T flour
- 4 T cornmeal
- 1/2 tsp. baking powder
- 1/3 cup chopped pickled jalapenos
- 1 cup grated zucchini
- 1/8 tsp. black pepper
- veg oil for pan
Squeeze all the excess water out of the tofu.
Process the tofu with the garlic and onion until smooth.
Mix with all the other ingredients in a large bowl.
Pour into an oiled 8 in square baking dish and bake at 375 for 25-30
min.
Can garnish the top with fresh or sundried tomatoes and/or jalapenos
before baking.
