Cornbread

Here's a real good one - don't remember where it came from, though!
- 2 cups organic blue cornmeal (or regular corn meal)
- 2 cups whole-wheat pastry flour
- 4 tsp baking powder
- 1/2 tsp. salt
- 2 cups soymilk
- 1/4 cup maple syrup
- 1/2 cup vegetable oil
Preheat oven to 400 degrees.
Lightly oil a 9 x 13 inch (or 8 x 12 inch) baking dish
(EVEN BETTER - a 12 inch iron skillet).
Sift dry ingredients into mixing bowl.
Combine the liquid ingredients and whip together.
Add the liquid to dry ingredients, stirring until no lumps are left.
Pour batter into the pre-heated pan and bake for 25 to 35 minutes.
Makes 15 servings.
