Tomatoes

Perfect appetizer for hot summer nights.
- 6 large, ripe tomatoes
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1/4 tsp. dried thyme or a few fresh leaves, chopped
- 1/4 C finely-snipped parsley
- 1/4 C snipped chives
- 2/3 C oil
- 1/4 C tarragon vinegar
Boil tomatoes 5-7 minutes to loosen skin and peel.
Cut crosswise in half.
Toss seasonings together.
Place tomato halves in a deep bowl, sprinkling each layer with seasonings
and herbs.
Combine oil and vinegar and pour over tomatoes, making sure all
are coated.
Cover and let marinate, chilled, for a couple hours.
