Tofu Joes

- 1 c. chopped onion
- 1 c. chopped green pepper
- 2 Tbsp. margarine or oil
- 2 c. sliced mushrooms
- 1 (15 oz.) can tomato sauce (or 1 large can tomatoes)
- 2 lb. firm tofu
- 1/4 c. tomato paste with
- 1 Tbsp. sugar (or 1/3 c. catsup)
- 1 tsp. cumin
- 1/2 tsp. basil
- 1 tsp. salt
Saute onion & pepper in margarine or oil.
Add mushrooms & saute about 2 minutes.
Stir in tomatoes & spices & simmer about five minutes.
Cube tofu & add & simmer another 5 to 10 minutes.
Ladle over rice or lightly toasted burger buns & serve.
