Vegan Ranch
Dressing

Here's one I found a while back,
I still haven't tried it, but it sounds good.
From The Vegetarian No-Cholesterol Family-Style Cookbook by Kate
Schumann & Virginia Messina.
- 1 cup vegan mayonnaise
- 1 cup plain soy milk
- 1 Tbsp. white vinegar
- 2 Tbsp. finely chopped green onions
- 1/4 tsp. onion powder
- 2 tsp. minced parsley
- 1 garlic clove, finely minced
- 1/4 tsp. paprika
- 1/8 tsp. cayenne
- 1/4 tsp. salt
- 1/4 tsp. black pepper
Place all ingredients in a jar with a tight-fitting lid.
Shake well to blend.
Makes 2 cups.
Best if chilled several hours or overnight.
I keep meaning to try it and just never get around to it.
