Could it get any easier?
You need:
- 4 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- 3 cloves garlic
- 10 fresh basil leaves (add more or less according to your
taste)
- 1 handful of capellini (angel hair pasta)
- 2 large ripe tomatoes
Boil a saucepan of water.
Throw in pasta when water comes to a rolling boil.
Now for the pesto.
Get your mini food processor (otherwise you big only will do just
as well).
Add in the olive oil, garlic, basil and balsamic.
Frappe away!
You can stop when the mixture is well blended and somewhat chunky
('cos of the basil).
Drain pasta well. Slice tomatoes into wedges.
Add tomatoes and pesto in the pasta and toss.
All that's left to do is serve!
