- oil for cooking
- 2 cloves garlic, crushed
- 1 onion, diced
- 375gm mushrooms, diced
- 1/2 red capsicum, diced
- 1/4 cup plain wholemeal flour
- 1 cup of soy milk
- 2 Tbl of tomato paste
- 1/2 cup fresh parsely (or equivilent dried)
- 1 tomato, diced
- 500gms spiral pasta, cooked
Heat oil in wok (or large saucepan) & saute garlic, onion, mushrooms
& capsicum for five minutes.
Stir in flour & cook for a further 2 minutes.
Add soy milk all at once and stir until mixture thickens slightly.
Add tomato, stir throughly.
Add tomato paste & parsley until well combined.
Add pasta to wok (or add sauce to paste if using a saucepan) and
stir through until heated throughly.
Now that I think about it, this recipe wasn't even vegetarian
when I first found it.
I have this habit of adapting things to suit!
