Below is a recipe that I made for lunch one day.
Place shredded lettuce on a plate
- A couple handfulls of lettuce
- 1 green bell pepper
- 2 medium size carrots
- 2 stalks of celery
- 1/4-1/2 package of dry hummus
- 1/4 head of cauliflower
Dice carrots, celery, and cauliflower
Mix hummus according to package directions
Cut lid off of green bell pepper and clean out the inside.
Combine the veggies and the hummus and stuff them into the bell pepper.
If you like, pour some salad dressing over the stuffed pepper
and the lettuce.
My favorite salad dressing is Paula's No-Oil dressing.
For this recipe I used the Lime and Cilantro.
