I made this for a party and it was a big hit.
Slice large eggplant in half lengthwise.
Coat it with olive oil. Peel as many garlic gloves as you like.
Place garlic under eggplant in low baking dish that has a thin layer
of olive oil.
Bake at 350 degrees until the eggplant is soft enough to be mushy.
(Don't let garlic get dried - Hint: Make little slits in the cut
side of the eggplant so that the garlic has a place to nest.)
Scoop out the eggplant and mush it together with the garlic.
Sprinkle a little salt and pepper (some red pepper flakes might
give it an interesting zip).
Serve with crispy crackers or pita chips.
