Quick, easy, and really good
- 1 cup pitted dates
- 1/2 cup raisins
- 1 cup sunflower seeds (toasted)
- 1/2 cup sesame seeds (toasted)
- Zest from 1/2 a lemon
- a little water
- puffed grain--rice, millet, etc. (optional)
Place dates and raisins in saucepan with a bit of water (say, perhaps,
a little less than 1/4 cup)and cook on medium until fruit is softened.
Put fruit and lemon zest in food processor and puree until thick paste.
Set aside for cooling.
After cooled a bit, scrape fruit into bowl and stir in toasted
seeds (and optional puffed grain).
Stir until evenly blended.
Press mixture into square dish and refrigerate.
Cut into squares when cool.
I have made this using pecans, walnuts, and pepitas with wonderful
results.
Any nut/seed, chopped and whole, works fine
