Diabetic
& Vegan Sandwich

This is a great recipe for a quick lunch with a diabetic/vegan
in mind.
- Authentic Pumpernickel Bread (whole rye, no wheat flour)
- Soy Signature (www.soysignature.com)
soy pate; garlic, dill pickle, tomato, or bell pepper flavor
- Fresh tomato slices
- Fresh lettuce leafs
- Slices of sandwich pickles
- Optional: a slice of non-dairy 'tofu' cheese slices
Spread soy pate on bread, then place lettuce, tomato, and pickles
in this order. S/P to Flavor. Add the 'cheese' directly following
the pate, or place last (on top) and toast until cheese melts.
Alternate soy pate flavors, or mix flavors to keep things changing.
