Energy Bars

Makes about 12 - 15 bars, depending on how thick you make them
and how you cut them. Make a big batch and keep them in the freezer.
- 1 cup almonds
- 1/2 cup raw peanuts
- 1/3 - 1/2 cup vegan choc. chips
- 1/4 cup sunflower seeds (raw)
- 1/2 cup quick oats (or whole oats)
- 3/4 cup rasins
- 8 dried apricots
- 2 - 3 tbsp lemon peel
- 1/2 cup honey style sweeter (maple syrup / rice syrup etc)
- Shredded coconut
Preheat oven to 350 degrees.
Place almonds in food processor and blend (covering ears!) until
chopped fairly fine. Add peanuts, choc. chips, rasins, apricots
and blend again. Add sunflower seeds, oats and lemon peel and blend
on high until mixture begins to thicken and turn lumpy. Slowly pour
in sweetener and blend until mixture won't turn in blender any longer.
Spread a layer of the shredded coconut in the botton of a pan,
about 9 x 13, or whatever you have on hand. Press mixture firmly
into the pan, covering with more coconut and pressing it firmly
into the mix.
Bake 20 - 25 minutes, or until golden brown. Cool before removing
and cutting into squares.
