This recipe goes by many names, among them "Mexican wedding cakes"
and "pecan puffs."
The cookie is elegant and delicious.
Makes approx. 28
Beat margarine until soft.
- 1/2 Cup vegan margarine
- 2 Tbsp. sugar
- 1 tsp. vanilla (or more!)
- 1 Cup pecan meats
- 1 Cup flour
- Confectioners sugar
Add sugar and vanilla and blend until creamy.
Measure nuts and flour and then GRIND in a nut grinder.
Stir flour mixture into butter mixture.
Roll into small balls.
Bake for 30 minutes at 300F.
Watch closely, checking for brownness.
As soon as balls turn light brown, remove them from oven.
Roll balls while hot in confectioners sugar.
Cool, and when cold, roll balls again through sugar.
Makes about 28 balls.
Note: these treats turn out best when the pecans are ground rather
Simple chopping may not work quite as well.
