This is quick and easy and very tasty. Works well as a side dish
or wrapped in chapati shells.
- 1 Tbsp olive oil
- 2 cups sliced mushrooms
- 1 cup sliced onion
- 1/3 cup grated vegan cheese (one that melts, like 'Vegan Rella')
- 1 Tbsp Dijon mustard
- Salt to taste
- Optional: green onions
Saute mushrooms and onions in the olive oil. Turn off heat and
add vegan chees, mixing in well as it melts. Add dijon mustard and
salt to taste. Garnish with green onions (optional).
