Scrambled
Tofu

One easy tofu recipe that I love is "Scrambled Tofu".
I use a variation on this recipe, but there are tons of ways to
make it.
Here it is:
- 1 lb extra firm tofu
- 1/4 - 1/2 cup nutritional yeast (can fudge it to taste)
- 2-4 tablespoons of Tamari (again to taste)
- 1-2 cups of chopped veggies (I use onions and carrots)
- 1 tablespoon of Olive Oil (or any kind of oil for that matter)
Place a pot (or large enough frying pan) over medium-high heat and
leave it there until it gets nice and hot (a drop of water on it will
immediately sizzle).
Immediately add in the olive oil and chopped veggies and stir around
until the onions take on a glossy finish (on their way to becoming
translucent) and a wonderful strong aroma rises.
Then crumble in the tofu (no need to drain it) and stir it around
for a minute or so.
Then add in the nutritional yeast and tamari and stir around for a
few more minutes.
You basically just want to heat it through so the time isn't a big
deal.
Taste it while cooking and adjust flavorings as you see fit.
This stuff is DELICIOUS.
It has the texture of scrambled eggs, but not quite the flavor,
but the flavor is wonderful nontheless.
This is great with white bread, although if you are more health-conscious
you should settle for whole wheat :)
