Tempeh-Banana

This is something that I accidentally discovered when I had no
other ingredients around...it is now my favorite sandwich!
- 1 whole wheat bagel or 2 slices whole wheat bread
- 1/2 banana, sliced
- 1/2 standard size package of tempeh
- 1/2-1 Tbsp peanut butter (OPTIONAL)
Arrange banana slices on tempeh (a little peanut butter helps it stay
together) and put between the bagel/bread slices.
Enjoy with a side of soymilk and follow it up with some tofu ice-cream
for a real treat!
If you don't want to use bananas, use apples or berries or whatever
fruit you think will be good.
If you'd rather use some vegan waffles, etc....let your imagination
run!
