Tofu Dip

Makes 5 cups
- 2 cups soy milk
- 1 lb tofu
- 1 tsp salt (or less)
- 4 tbs nutritional yeast
- 4 tbs sweet rice vinegar
- 1 lime (juice)
- 3 cloves of garlic, crushed
- 2 tsp vegetable broth mix
- 2 bunches of green onions, chopped
Heat up tofu in microwave until hot, put in blender. Heat soy milk
to boil (in microwave).
Place soy milk in blender along with tofu.
Blend together until smooth.
Heating soy milk before helps make sauce thicker and creamier.
Add salt, yeast, vinegar, lime and garlic.... blend together.
May add more nutritional yeast if necessary to thicken.
Put mixture into bowl and add chopped green onions.
Refrigerate overnight.
Ready as a creamy dip.
