Comforting
Potato Soup

This recipe is good on cold days when you need something warm in
your tummy. It serves 2-4 depending on whether it's served as a
meal or a side.
- 3-4 medium potatoes, peeled and cubed
- 1 medium onion, chopped
- 1 1/2 cups chopped celery
- 1 clove garlic, minced
- 2 T. olive oil or animal product free margarine
- 2 cups water
- 2 cups soy milk
- 3 T. flour
- sea salt
- freshly ground black pepper
Heat the oil in a dutchoven or soup pot.
Add the onion, celery, and garlic - saute until tender.
Stir in the potatoes and water, cover, and simmer for 15 minutes.
Add the flour to 1/2 cup of soy milk and stir well.
Add this mixture as well as the rest of the soy milk in with the other
ingredients.
Stir the soup constantly over a medium - high heat until it becomes
thick and bubbly.
Add sea salt and freshly ground black pepper to taste.
Voila! ;)
This is from an old recipe of my mom's that I converted into a
vegetarian form.
It taste better my way, I believe, and amazingly, she thinks so
too. :)
