This serves 4 ppl.and it can be done in a jiffy.
Cook lentils and spinach together till the lentils are soft.Mash them
to make a smooth mixture.
- 1/4 cup lentils
- Washed and chopped half a bag of spinach
- 1tsp cumin seeds
- 3 tsp of grated coconut (fresh works the best)
- 1tsp oil
- mustard seeds(1/4 tsp)
Grind the cumin seeds and coconut with a little warm water in a blender.
Add the above paste to the lenil and spinach mixture.
add salt to your taste.
Heat the oil in a pan, add mustard seeds and after they sputter add
to the mixture.
Boil this for 2-3 minutes and the soup is ready.
Instead of spinach you could use chayote,cucumber or any gourds
that you can lay ur hands on.
