My mom's tabouli recipe. Personally, I'd double the amount of the parsley and tomatoes in her recipe.
SERVES 6
- 1 cup Bulgar wheat
- 3 medium tomatoes, seeded and chopped
- 1 bunch green onion, chopped
- 1 small green pepper, seeded and chopped
- 1 cucumber, peeled and diced
- 1 cup fresh parsley, chopped
- 1/3 cup olive oil
- 1/3 cup lemon juice
- 1/2 teaspoon salt
- 2 cups water
Soak bulgar wheat in 2 cups of water or chicken broth let soak overnight or use boiling water and let soak 1 hour.
Mix all ingredients.
Refrigerate 2 hours. |
